Since there will be no home-cooked meals for the next few days, I decided to post something I made last week. It’s a simple dish, but it brings back some wonderful memories of Okinawa, since it’s a staple there.
- 1/2 Pound ground beef
- 1.5 cups of short grain rice, cooked
- 3 lettuce leaves, chopped
- 2 tomatoes, diced
- 2 garlic cloves, chopped
- 1 onion, chopped
- 2 tablespoons tomato ketchup
- Chili powder, garlic powder, and pepper, to taste
- Shredded cheese
You can prepare everything while the rice is cooking! Wash lettuce leaves and tomatoes, chop, and set aside. Chop the garlic and onion. Mix the ground beef with the garlic, ketchup, chili powder, and garlic powder. Let it sit for a while, to soak in all the seasonings. Also, it’s best to wait until the rice is almost done before cooking the meat. Is the rice about done? Ok, cook the ground beef mixture, drain the oil. Cook about 3/4 of the onion, and added to the beef. Scoop rice into bowls, put the meat on top. Next, top with cheese. Now, add the shredded lettuce on the cheese. Lastly, mix together leftover onion with the tomato and add as a final touch. Easy and delicious!
